We are continuously inspired by the passion that siblings Edith and Ivan bring to every aspect of what they do on the farm. This week we feature their anaerobic washed process coffee. This coffee undergoes fermentation in a controlled low oxygen environment, a process borrowed from the wine industry! The lack of oxygen shifts the microbial ecosystem, favouring anaerobic bacteria and yeast. These micro-organisms break down the sugars and compounds in the cherries to release rich byproducts, including alcohols, esters, and acids, that are absorbed by the beans. The result: a coffee with flavours like panela, stone fruit, citrus and soft berries. Join us for our complimentary tasting Friday at 2pm.
